Whether you need a quick pre-workout snack, or a quick bite between meals or even a healthy snack for your kids after school – these energy bites pack the punch. Even better – they are easy to make.
These were my first attempt, but now that I know the consistency I will continue to try other nut and fruit combinations.
The two ingredients? Nuts and dates!
I chose cashews and dates for my first attempt, because historically I have been known to devour the Cashew Cookie Larabar during hypoglycemic episodes. Cashews are a great source of minerals, magnesium being one of them. Magnesium is critical for a healthy stress response, blood pressure control, anxiety and muscle function. Dates are also a good source of minerals, fiber, and vitamins like iron, A, K, folate and B’s. They can help ease digestive upset including constipation, improve anemia, and help keep bones strong.
Ingredients:
- 2c cashews
- 2c dates
Put in food processor and blend until everything is mixed! Roll a tbsp. amount into a ball, set in container. Put in fridge or freezer to set and enjoy!
